Crock Pot Pork Tenderloin and Onions Recipe

I am always looking for crock pot meals to prepare on soccer practice nights.  Enter in the crock pot pork tenderloin and onions recipe!  The best thing about this crock pot pork tenderloin and onions recipe is you prepare it the night before you are going to cook it. Then, you just set it up in the afternoon and let it cook away in the crock pot.  I found this recipe on TheCreativeBite.com.  I only used one large onion instead of the 2 it calls for.  Unless you are an onion lover, you may want to cut the onions in half like I did 🙂

Ingredients
  • 2 pound pork tenderloin
  • 2 yellow onions finely sliced
  • 1/2 cup olive oil extra virgin
  • 2 Tbsp dijon mustard
  • 3 Tbsp worchestire sauce
  • 2 Tbsp soy sauce low sodium
  • 1/2 tsp garlic powder
  • 1/2 tsp cayenne pepper
  • 1 lemon juiced
  • 1 1/2 cup chicken broth low sodium
  • 1 crock pot liner
Servings: people
Instructions
  1. Unfold crock pot liner and place in a large bowl. Add all of the ingredients, except the chicken broth, to the bowl and marinate overnight or up to 24 hours.
  2. Remove the filled liner from the bowl and place in your crock pot.
  3. Add the chicken broth and cook on low 4-5 hours or until the internal temperature of the pork has reached 145degrees
  4. Remove the pork from the crock pot and allow to rest 5-10 minutes before slicing. Serve topped with onions.
